Yellow Cake

Ingredients:
2 ¼ cups white spelt flour (baking quality)
1 cup organic cane sugar
½ cup organic canola oil (expeller pressed)
1 ¼ cups plain or vanilla organic soy milk
3 ½ tsp. baking powder
½ tsp. salt
1 tsp. vanilla
3 large eggs
Directions:
1. Preheat oven to 350 degrees.
2. Prepare your pans. If you’re making a round, two-layer, or a rectangular 13x9x2-inch cake, lightly grease and flour the bottom and sides of your pan(s). If you’re making cupcakes, line your cupcake pan with cupcake papers, or lightly grease and flour the bottom and sides of the pan.
3. In a mixing bowl, blend all ingredients on low until smooth, then beat on high for several minutes. Scrape down the sides of the bowl with a spatula and pour batter into prepared pans or cupcake cups.
4. Bake round cakes for 25-30 minutes, rectangular for 35-40 minutes and cupcakes for 15-20 minutes.

Cool cakes on a wire rack in the
pans (cupcakes can be removed
from the pan to cool.)

favorite topping!
