Yellow Cake
You'll need:
2 eggs
1/2 Cup non-dairy margarine OR butter
1/2 Cup natural cane sugar
1 1/2 Cups organic applesauce (I prefer Eden Organic Apple Sauce, because it only contains apples!)
1 tsp. gluten-free vanilla extract
1 1/4 Cups organic white rice flour
1/4 tsp. sea salt
1/2 Tbl. baking powder
2 1/4 tsp. xanthan gum
1. Whip eggs for 5 minutes with electric mixer. Set aside.
2. In large mixing bowl cream margarine and sugar. Blend in applesauce and vanilla.
3. In separate bowl combine rice flour, salt, baking powder and xanthan gum.
4. Add to creamed mixture. Mix just until well combined, about 30 seconds.
5. Gently fold whipped eggs into cake batter. (The whipping and folding process adds a light texture to the cake, so it's important to not overmix.)
6. Pour into prepared pan and bake at 350 degrees for 35-45 minutes.
7. Cool in the pan.
