                            Turkey Meatloaf - GF, DF
 

                                              

 

 

This meatloaf was a favorite of my daughter’s when she was a toddler.  Over the years I’ve adapted it to suit our needs, and it remains a family favorite.     

 

 

 

 

Ingredients:

 

 

2 # Natural ground turkey

 

2 tsp. Sea Salt

 

¼ tsp.garlic powder (optional)

 

1 Tbl. Dried OR fresh, chopped parsley (optional)

 

½ Cup uncooked hot rice cereal (brown or white)

 

6 raw, grated baby carrots Or 1 medium sized carrot, peeled and grated

 

1-2 eggs, lightly beaten (optional)

 

 

1-2 Tbls. olive oil

 

 

 

 

Instructions:

                                                                                           

 

1. In a large mixing bowl, combine all ingredients, except for the olive oil. 

 

2. Shape turkey mixture into a loaf. 

 

3. Heat a large pot or Dutch oven over medium heat.  Add the oil to the Dutch oven. 

 

4. Place meatloaf in Dutch oven and lightly brown all sides. 

 

5. Once browned, add water to cover about half the loaf.  Reduce heat slightly, cover with a lid and simmer for approximately 2 ½ hours, adding more water as needed. 

 

 

 

Sweet Agave Glaze:

 

 

1. When meatloaf is done, remove from pan and allow to rest before slicing. 

 

2. If desired, bring remaining liquid to a boil, and whisk in 3 Tbls. Agave Nectar and 2-3 Tbls. potato starch (to avoid lumps,mix potato starch until smooth in ½ Cup water before adding to hot pan). 

 

4. Whisk hot mixture in pan until it thickens. 

 

5. Remove from heat and drizzle on top of meatoaf.
