Sugar Cookies With White Spelt Flour
Our kids love sugar cookies! This recipe is a stand-by for every holiday and birthday. Whether you want pink and yellow eggs for Easter, orange leaves for Autumn or green shamrocks for St. Patrick's Day you can't go wrong with this dough!
Get the kids involved in this one (you'll be cleaning up sprinkles from the floor for a week), you'll have a blast!
3/4 cup butter
1 cup sugar
2 eggs
1 tsp. vanilla
2 1/2 cups white spelt flour
1 tsp. baking powder
1 tsp. salt
1. Blend the butter and sugar with an electric mixer until fluffy, about 3 minutes. Add your eggs and vanilla, blend while you're combining your dry ingredients in a separate bowl.
2. Combine your dry ingredients with the wet and blend just until smooth. Never over mix your cookie batter when the dry ingredients have been added.
3. Wrap the dough in plastic wrap or place in a covered bowl, refrigerate for at least *1 hour.
4. When you're ready to bake your cookies, preheat your oven to 400. Roll your dough out to about a 1/4 inch thickness and use cookie cutters to make your favorite shapes.
5. Place your cookies on a lightly greased cookie sheet and **bake for 6-8 minutes.
After your cookies are baked top them with our "So Sweet Icing."
Makes about 2 dozen medium sized cookies.
*This is a great make ahead dough. You can have your dough ready the day before you actually want to bake them.
**If you're using sprinkles to decorate your cookies, you'll need to do it before they are baked. Dab the cookie dough with a little water and pour your sprinkles on.
