Why Wheat-Free?

The World of wheat-free is a very wide open place.

Grocery stores and even some restaurants are catching on to the fact

that people want more

wheat-free grain and

flour options.

Spelt, oats, rye, soy flour, quinoa, rice flour, corn flour, kamut and the list

goes on.

You can find many recipes using some of these flours and grains in our Gluten-Free section as well.

My flour of choice for baking is spelt.  Though it's a cousin of wheat, people who have a wheat intolerance are often able to tolerate spelt.

I've found it to be a nice flour to work with and it seems to convert almost equally when used in wheat flour recipes.

Most major grocery stores now carry spelt baked goods, but keep in mind

pre-packaged spelt products are allowed to contain wheat without stating so on the ingredients list.
