Mexican Mini Meatloaves







These are a quick and mildly spicy twist on meat loaf.


 

 

 


1 recipe Baked Meatloaf, omit the sausage



1 recipe BBQ Sauce, with 3 Tbls. Mexican Seasoning added







1. Combine all the ingredients for Baked Meatloaf and form the raw meat into 6 mini loaves.

2. Preheat a heavy bottomed pan on medium. You only need to oil the pan if you’re using very lean ground beef, or if you’re using ground chicken or turkey.

3. Brown the loaves on all sides then drain any grease from the pan.

4. Pour the BBQ Sauce over the loaves, turn the heat down to medium low and simmer for 30 - 35 minutes. Turn the loaves every 10 minutes to thoroughly coat them with the sauce.

5. When the loaves have finished cooking serve with extra sauce drizzled over top.





They pair very well with fresh cooked beets, baked potatoes and a green salad!
