    Harvest Sauté    

 

 

 

 

 

 

This is wonderful as a light dinner, a filling side, or as a topping to your favorite pasta!

 

 

 

 

 

 

 

 

 

Ingredients:

 

 

2 Tbls. Extra virgin olive oil

 

1 large Vidalia or white onion

 

3 small zucchini squash

 

2 large tomatoes or 3 cups of cherry tomatoes

 

A handful of fresh basil leaves

 

A handful of fresh parsley or 2 Tbls. dried parsley

 

1 tsp. granulated garlic  

 

Salt to taste

 

Pepper to taste

 

Shredded mozzarella or provolone cheese (optional)

 

 

 

 

Directions:

 

 

1. Heat a heavy bottomed pan over medium heat for a minute or two, then add the oil. 

 

2. Peel and slice the onion into thin strips.  Cut the zucchini and tomatoes into thin round pieces. 

 

3. In the preheated pan sauté the onions until they begin to wilt and become translucent, about 5 minutes.

 

4. Add the zucchini, tomatoes, and seasonings (everything but the cheese) cook for 10 minutes with a lid partly covering.

 

5. Top with shredded cheese if you like, cover and cook for 5 more minutes. 

 

Sprinkle with fresh parsley and serve hot.
